One of my FAVORITE vegetable dishes I have eaten so far is a quick fix … no cooking required, but wonderful to eat! I will walk you through the process.
1.) Wash the spinach.
2.) Cut the ends off of the Spinach (but leave on the stalk) and place them in a heat resistant bowl.
3.) Boil water in your electric kettle.
4.) Pour the boiling water over the top of your spinach.
5.) Stir the spinach to make sure it is all submerged.
6.) We are only trying to ‘wilt’ the spinach so it only stands for 1-2 minutes at most.
7.) Strain the spinach.
8.) Rinse the spinach in cold water to stop the wilting process.
9.) Now, squeeze the spinach dry and squeeze and squeeze … you want the majority of the excess water out.
10.) Separate the balls of spinach with your fingers and add the following: Sesame Seed Oil, Salt & Sesame Seeds.
11.) I don’t know exactly how much to put on, just use your “cook’s judgment” and just remember that you can always add more as you go along.
12.) Now, with your hands mix the ingredients together. This takes a few minutes to make sure each leaf is separated and coated.
13.) The combination of oil, salt and seeds should bring a bright and fresh taste to your mouth with a bit of buttery smoothness. It will taste better if you let it sit in your refrigerator before eating. I make a big batch of this and keep it in my fridge and pull it out for meals … WONDERFUL!
